- Take Olive oil
- Get 1 cup mince onion
- Get 1 garlic, minced
- Get 2 cups arborio rice
- You need 1 cup white wine
- Take 3 cups chicken stock
- You need 1/2 cup parmesan cheese
- You need 4 tbs butter
- Get 2 oz black or white truffle

- Heat olive oil in medium heat
- Add garlic and onion and sweat for 3 minutes
- Add rice and lightly toast in oil for 2 minutes, stiring frequently
- Add chicken stock 1/3 rd at the time, stiring until each additional 1/3 rd absorbed.
