The ingredients needed to cook Chakalaka and Chicken Rice:
- You need Cooking oil
- You need 1 small onion
- Provide 1 medium bell pepper
- Prepare 1-2 chilli peppers
- Use 1 medium carrot
- Use 1 Roma tomato
- Get 1 can baked beans
- Take 1 cup cooked rice
- You need 1 large chicken breast
- Take Half or 1 chicken stock cube
- Provide Turmeric or Curry powder
- Provide Chicken spice
Steps to make Chakalaka and Chicken Rice:
- Cut the chicken into cubes or strips and rub with the chicken spice. Set it aside.
- Dice onion, bell pepper, and chilli peppers
- Heat up 2 tbsp of cooking oil and fry the veggies in Step 2 until soft, stirring occasionally
- In the meantime, grate the carrot and chop up the tomato
- Add turmeric and/or curry powder and the chicken stock cube to the veggies in the pot and stir
- Add the carrot, tomato and chicken to the pot, stir, then close the lid and let it cook at medium heat. Stir every minute or so.
- Open the can of beans and drain most of the tomato sauce if it's a lot (I like using cheap canned beans for this but they tend to have a LOT of watery tomato sauce)
- Once the chicken and veggies are done, turn off the stove and add the beans and rice. Stir well until everything is warmed up.
