The ingredients needed to cook Chakalaka and Chicken Rice:
  1. You need Cooking oil
  2. You need 1 small onion
  3. Provide 1 medium bell pepper
  4. Prepare 1-2 chilli peppers
  5. Use 1 medium carrot
  6. Use 1 Roma tomato
  7. Get 1 can baked beans
  8. Take 1 cup cooked rice
  9. You need 1 large chicken breast
  10. Take Half or 1 chicken stock cube
  11. Provide Turmeric or Curry powder
  12. Provide Chicken spice
Steps to make Chakalaka and Chicken Rice:
  1. Cut the chicken into cubes or strips and rub with the chicken spice. Set it aside.
  2. Dice onion, bell pepper, and chilli peppers
  3. Heat up 2 tbsp of cooking oil and fry the veggies in Step 2 until soft, stirring occasionally
  4. In the meantime, grate the carrot and chop up the tomato
  5. Add turmeric and/or curry powder and the chicken stock cube to the veggies in the pot and stir
  6. Add the carrot, tomato and chicken to the pot, stir, then close the lid and let it cook at medium heat. Stir every minute or so.
  7. Open the can of beans and drain most of the tomato sauce if it's a lot (I like using cheap canned beans for this but they tend to have a LOT of watery tomato sauce)
  8. Once the chicken and veggies are done, turn off the stove and add the beans and rice. Stir well until everything is warmed up.
  9. Serve and enjoy.
