The ingredients needed to cook Cinnamon and Mixed Fruit Bagels:
- Prepare 500 grams stone ground wholemeal flour
- Provide 15 grams dried active yeast
- Use 10 grams salt
- Take 1 tbsp ground cinnamon
- You need 4 tbsp olive oil
- You need 15 grams light muscavado sugar
- Take 350 ml water
- Use 100 grams mixed dried fruit
- Provide 1 egg
Instructions to make Cinnamon and Mixed Fruit Bagels:
- Place all the dry ingredients (keep the mixed fruit to one side for later) and the oil into a bowl keeping the yeast away from the salt.
- Pour in the water gradually until the dough begins to form. (You may not need it all)
- Tip the dough onto a dry smooth surface and knead for 10mins.
- Place the dough in a lightly oiled bowl and cover. Leave to prove for about 4hours.

- Pre-heat an oven to 190°C / 170°C fan and bring a pan of water to boil.
- One by one, boil each dough ring for 90s, turning over every 30s. Remove and place on a grease proof paper lined tray.
- Crack the egg into a cup and beat with a fork. Use this to egg wash each bagel.
- Place into the oven for 20-25mins or until golden brown.
- Remove from the oven and allow to cool.
