  1. Wash and peel the skin of red carrots. Grate them in a grater or food processor. Scrape coconut. Make a thick paste of milk powder. Heat ghee in a wok.Fry the grated carrot lightly. Add scraped coconut, sugar, thick paste of milk powder and toss all. Add a pinch of salt /rock salt to balance the sweetness. If needed add 1 tbsp more sugar depending on the sweetness of carrot and coconut.
  2. Fry all stirring continuously till completely dry and well blended. Sprinkle crushed cardamom powder and toss all. Add chopped cashewnuts or almonds and raisins. Allow it to cool. Make round laddus or truffles. Sprinkle some dry milk powder and garnish with cashewnuts. Serve this delicious carrot coconut truffles as a dessert to guests after meals.
